SEMOLINA PUDDING (SOOJI HALWA)
Ingredients:
- Water 3 cups
- Sugar 1 cup
- Fennel Seeds 1/2 teaspoon
- Food Color (golden-yellow) 1 pinch
- Clarified Butter (Desi Ghee) or Unsalted Butter 1 cup
- Semolina Flour 1 cup
- Dry Fruits (as per your preference)
- Cardamom Powder 1/2 teaspoon
Method:
Place a pot over medium heat. Pour in the water and add the sugar, fennel seeds and the food colour.
Leave to cook until it boils and the sugar dissolves. Stir occasionally.
In the mean time, place another pan over medium heat. Add in the ghee and the semolina. Mix well, and cook on low-medium heat. Keep stirring . If you stop, it may burn or form lumps.
Don't forget to stir the water and sugar mixture occasionally.
Once the water and sugar mixture starts to boil, turn off the heat.
Keep stirring the semolina and ghee for another 2 minutes, until the colour changes slightly to a light brown shade, and once the semolina starts to separate from the ghee.
Reduce the heat to low and add in the water and sugar mixture slowly, and continuously stir.
Increase the heat to medium, and keep stirring until it becomes thick and the ghee separates from the semolina.
Add in some dry fruits, and leave a little on the side for garnishing.
Keep stirring.
When it starts to bubble, reduce the flame to low.
Once it starts to leave the edge of the pan (stops sticking to the pan), add in the cardamom powder and mix again for about 1 minute.
Switch off the flame. Garnish with the remaining dry fruits, and serve.
